Took out two venison roasts, cut into 1/2 inch thick slices and pounded flat with a meat mallet. Flour and essence as seasoning and deep fried. #1 wife made mashed potatoes and salad. I had fired up the smoker for a little while earlier and smoked some fresh jalapeno halves and a bunch of cayenne peppers.

Very tasty!

Spunds goreat-no white gravey?? i made some venison pot roast in oven today- very good- tomorrow we'll have todays catch-- huns and sharpies.

I have never been able to make passable gravy much less master the process. Now if Huns and Sharpies are anything like Bobwhites fried, then I would learn how to make gravy! Fried Quail, homemade biscuits, and white gravy is one of my all-time favorite meals!

Pioneer brand out of San Antonio makes an excellent line of powdered gravy mixes available at your HEB. I also recommend their biscuit/pancake mix over Biquick. :)

Today was my stepson's 16th birthday and he requested venison backstrap, cranberry sauce, fresh cut french fries and corn on the cob. He got what he wanted along with his Mom's German plum cake. :D

We use the Pioneer biscuit/pancake mix all the time but I didn't know they made a gravy mix too. What'll they think of next? I guess I should get out more. Your going to spoil that boy, he's going ot think he's suppose to eat like that all the time! With any luck he will.

Easy sausage gravey--fry up some bulk bkfst sausage-when cooked and crumbled add flour to mix till fairly dry-cook 2 min or so then slowly add milk-evap or regular-stir constantly till thick and smooth- season with S&P-for chix or grouse etc i use milk with flour and chix base-Just mix about 1/2C of flour with 1/2C milk-thn stir into heated milk-season with 1Tbsp of chix base and S&P--for venison or other red meat I usebeef base instead of chix for chix fried stuff- for pot roast etc i use beef base-water and flour/water mix-- easy and very good- later on you can add some spices etc to make italian style or other sauces.
