Simple late Sunday dinner; chops about 3/4 thick, brushed with olive oil and Penzey Beef Roast Spices, broiled. Served with mashed potatoes and spinach.

On the tender side, mildly gamey, we had one chop left over, my wife will slice it cold into her salad she'll carry to work tomorrow.
