View Full Version : Crock-pot venison scraps?

Every time I butcher a deer I get a 10 lb bag of meat scraps. Sometimes more.
Usually I grind it into burger at some later date.

I've been thinking of trying something different...

What do you think about throwing the bag of scraps into a crock-pot with some pork fat and two bottles of BBQ sauce, cook for 12 hours, pull meat apart and serve on a bun?

It sounds good to me. I would probably chop an onion or three into it also.

Those kinds of pieces I may also make soup, stew in brown gravy to be served over pasta Somewhat like beef tips or make chili. Very seldom does it end up in a grinder.

I do the gravy over egg noodles thing like Altjaeger quite often. Also use the scraps in a pot of chili put to simmer in a dutch oven on the woodstove all day. I've never tried your BBQ sauce idea but it sounds good to me.

I don't use the crock pot much (ever). My wife does but never for venison. I'll take those "scraps" and cut them into about 1 inch cubes (pieces) flour them real good, brown them in some olive oil (lard tastes better but I'm trying a little) and make "carne guisada". I like to let it simmer all day though because the meat becomes more tender as it cooks.

Over noodles I use ground-up antelope sausage w/sour cream to make "kinda-like-Stroganoff-but much-more-'I don't believe you ate the whole pot of that stuff'".
