Saturday is opening morning of gun season here. I will meet my hunting buddy of many years and my brother's son-in-law Friday afternoon, set the tent camp, prepare a fine meal. Then we'll visit over the fire and cups of black, dark roast coffee before heading to bed with dreams of meat on the pole Saturday. We will have four hot meals during the trip with breakfast the responsibility of each individual. My buddy will provide two and I will provide two. I did not ask my brother's son-in-law to chip in for fear that he might mistake MRE's as food.:D

Last night I spent a couple hours trimming and cutting some 6-7 lbs of venison shoulder into little cubes for chili. I browned it with some onions a few minutes ago, dumped in some canned tomatoes and poured the spices to it. It is now simmering quietly on the stove with the first taste test for spices in an hour or two. Beans will be added in camp. Enough will go to the camp to feed everyone and the rest will go to the freezer without beans. We will eat it with some tortilla chips Saturday or Sunday noon before breaking camp.

I saved two backstraps from last season and will thaw it tomorrow and start them marinating. They will be broiled on opening's eve whole over a bed of hickory and oak coals. In the coals will be three foil pouches containing potato, carrot and onion with butter, salt and pepper. Desert will not be necessary.:D

Whatever my wife fixes:D since my "hunting camp" is also my home and my sole responsibilty on opening weekend is to collect our winters meat. Good luck to you next weekend Alt !

Thanks Sabre, it is darn tough hunting there. But it is a chance to hunt with those I wish to.

If I get out this weekend, I'm just going to do the Sandwich thing or something easy to fix and nothing to clean up. Alt, sounds like you guys are going to have a grand time, both hunting and eating! Sabre, your method sounds better and better to me all the time. Good luck, be careful.

Well from past experience I would guess that at least one meal provided by my partner will likely be a Zatarains or Tony's Red beans and rice with sausage added or jumbalaya mix. We always eat well.

You saved me asking if you opened this weekend or if you were in the South Texas late season. I would have never figured you for a sandwich guy in camp except maybe a lunch. :)

In some ways that sounds like heaven being able to walk out the door on the spur of the moment for an evening's hunt. On the other side I am really glad to getaway to a camp. Hunting and fishing camps are the finest time of the year for me after the holidays with family.

It is nice to be able to walk out the door and go hunting whenever the mood strikes and I wouldn't have it any other way. I have a strong and regular "need" to hunt and living here gives me the ability to satisfy that need at will. However, I've never known the hunting camp experience and have always thought it sounded great. I envy you that. Enjoy it !;)
