I got a SwingBlaze Knife from Outdoor Edge. It is just the right size for skinning, gutting, and has a revolving Gutting knife that "unzips" the abdomen for quick dressing out. I really impressed with the quality.

Well... Outdoor Edge claims they make the best knives in the world. A bold statement IMHO...

BamaBob ----- I have used many different knifes over the years. I am a Deer hunter turned Elk hunter with several trips to Alaska for all it has to offer and limited time in Africa. I liked the gut hook designed knifes for Deer and smaller animals, but it left much to be desired for Elk sized game. The thicker hair would ball up on the largest of gut hooks. Three years ago I bought the Swingblade design from the Boone & Crockett Club and finally I can say it is the best design for the larger animals. Thanks Outdoor Edge for a fine knife, it is taking over the skinning chores for me and mine. Good shooting.

I found the same in that gut hooks tend to ball up fur with larger or thick furred animals. I solved it by getting a Fox n Hounds three bladed folder. One shaped like the swing blade gutting edge, one a nice drop point and one a real saw capable of bone or wood quite easily. Browning and a couple others made them in the past b ut now far and few between.
