View Full Version : Butchering knife set

I was thinking about buying one of those kits for butchering (Not field dressing) game. It seems the most recognized on the market is Outdoor Edge but that also seems the most expensive. Any advise?

Victorinox/Forschner and Wenger/Swibo (common ownership) both make good quality butcher knives with plain fibrox handles. I don't have anything against the Outdoor Edge stuff but perhaps the Victorinox and Wenger professional butcher's knives are somewhat better. The Old Hickory carbon steel stuff is pretty inexpensive and some folks say those knives work fine.

I have several of each of the above knives but I don't own any Outdoor Edge with which to compare them.

Thanks DWK but I was thinking of one of those kits with case, sharpener, scissors, etc. as a gift for my sons. It doesn't need to be professional quality like I'm sure Victorinox/Wegner are.

The kits do have the appeal of being a self-contained set. They would undoubtedly make a nice gift and I haven't heard of hunters saying that the components don't work.

I would also give them some gauntlet-length dishwashing gloves and handi-wipes if those aren't already included in the kit. Maybe also a cotton game bag or two.

FWIW, I ordered the Outdoor Edge 12 pc. butchering kit from Cabelas. It was on sale & backordered and just arrived. Seems to be an excellent value and quality for the average hunter who does it himself.

My mom still has my little set of Chicago Cutlery knives that my ex & I received as a wedding gift... And you know, those high-carbon blades sure do take a nice, easy edge for me.... I wonder if I could get her to send me just the butcher's knife? (Of course, I suppose my brother might prefer it if I left it out there for when he's got an Elk to bone out....:D )

The rest of the work I usually do with my skinner and a Rapala filet knife - you know, the cheap, wooden-handled one. Easy, wicked edge on that one.... I just went looking and it appears that Chicago is no longer making their butcher's knives. WTH?

But do any of you guys have a read on the Mundial brand that cabelas carries? They look like the same thing that you'd find in a commercial kitchen supply outfit. On the one hand, they don't seem real high quality (or like they'd even recognize high quality if it bit 'em!), but I'm pretty sure that a lot of professional meat-cutters use them without complaint...
