Had a couple of chukers in freezer so tried this one last night-cut chukers into chunks- dredged them in seasoned flour and browned them well in butter- when brown I added some fr mushrooms cut in 1/2 and cooked them for 3-4 minutes. then I added a glass of dry red wine and de glazed the pan.
Then i added about 1 1/2C of Bordelaise sc from NY eve NY strip dinner and some sctomate-some pearl oninos and 2 slices of salt pork cut in dice browned well- i simmered it for about 40 min and served it over rice --very nice would work well with pheasant also- had I thought I would have browned the salt pork first- then used fat to saute chuker etc. ah well another Senior Moment.
