Tonight was my first time to use peanut oil in a deep fryer. I strained it through a canning strainer and then a tea strainer before pouring it back into the bottle. For now I put it in the back of the refridgerator marked as "fish oil". How do you users save and store it?

Good question.

I think we've been doing it wrong according to what I found here;

web page (http://bbq.about.com/b/2004/01/13/peanut-oil-storage-from-a-deep-frier.htm)

Guess I better let the wife read it too.

Got one of these fryers for Christmas, and still have not used it.
I've been worrying about what to do with the oil, once open.
I've gotta get some more venison out of the freezer before I can buy some oil!

I have one of the small electric home fryers and bought 2 quarts of peanut oils for about $6.50. After straining I have it in the back of the fridge for now,

I let it cool and settle, then dip off the clear oil. I dump the dregs. I store it in the refrigerator. I never have used any over 3 times. Thought too much of the food to use burnt oil to fry it.
