I am doing a pork shoulder and a venison Horseshoe roast today for some friends-I rubbed the shoulder last nite and also injected the venison- I'll put them both into my cooker/ smoker at about 8am -bast with Smokin Willie's mop a few times and when shoulder is about 165F i will add some BBQue sc and wrap it in foil till it gets to about 195F- then I'll rst it and finally shredded it- add sc to some and have some plain for serving on whole wheat or white buns sc & cole slaw optional. The venison will be cooked to 145F and then wrapped- when it's tender I'll slice it to be served at about 6pm. Biggest problem is controlling the heat as it's about 75 out now and I usually do this stuff in Dec when it's below 30F

Sounds delicious. My wife and I are planning a quiet day together. I have venison backstraps in steak and chop marinade. Over roasted potatoes sound good with it.

Wife smoked a beef roast Friday with pecan wood. Yummy.
Yesterday we grilled hamburgers and hot dogs over red oak. Another tasty meal.

Well we had fun BUT Things went a bit south at about 12:30 when i went to turn the pork shoulder and the rack in smoker tilted- down went the meat- down went the water pan and up came the steam- luckily the meat stayed on the rack- the elec heat rod in smoker didn't break and so i put shoulder in foil in oven whilst i cleaned up lava gravel in bottom of smoker- got heat going and put pork back- the venison had already been transferred to the oven so it was unaffected- all turned out well- pork wastender but not enough to pull so we ate it sliced and as usual folks liked the injected venison best-weather sucked as we had remenants of Alex bring intermittent rain all day and night- so harley folks came by auto- fireworks were cancelled and we ate inside- all in all it was fun- lots of food- beer- wine- etc.
