Smoked hamhocks and kraut, layered up in the crockpot and cooked all day until the meat is just about fallin' off the bones.

Hey Alan believe it or NOT some of us Yankees travel and are not limited in our Gustatorial Horizons-Here i am a Yankee and gonna cook 5 briskets,beans, and Biscuits in two weeks for our saddle clubs last speed show- I learned my BBQuein in Texas-some with Smokin Willie & Lum's in Junction and some with Cooper's in Mason and also with the Beefy Cowboys from The San Jacinto Smoke House Team-- as for hocks & kraut even the ole Germans in Wisc do them pretty well- remember we grow a few hogs around this part of the country.

Thanks for the reminder SeniorCoot, it brings to mind the fact that a lot of foods that we consider regional are actually more along the lines of ethnic. Quite a few of our ancestors immigrated to this country with nothing more than a dream and pocket change. They couldnt afford the better cuts of meat, so they bought what they could afford and created recipes.
Can the south claim hamhocks? Sure! Their own people raised free range hogs in the oak forests of appalachia and none were wealthy enough to throw away anything but the squeal so they made do with what they had and developed some mighty fine recipes.
At the same time, the decendants of German, Polish, and Hungarian immigrants were cooking the same cheap cuts of meat where they settled in the north, so I guess they have as much of a claim as the next guy.
So there ya have it, it's not truely a matter of being regional, it's a matter of economics!
And speaking of economics, That pack of three smoked hamhocks cost me $2.38 at walmart, and the kraut was $.78, and I got two meals out of it. Some days it's actually good to be po' folk!:D

By the way, Hey Alan, my south of the Mason/Dixon amigo, I mooched about ten pounds of pork trimmin's off a butcher friend last nite. Mostly fat.
The cracklin's should be ready by lunchtime if ya wanna stop by, have a beer, and chew the fat (pun intended).:D

Wife won a gun or 1/2 pig at DU banquet- we took the pig- from Local fair- 4-H hog- he cut -smoked- wrapped it as we wanted- man it was good- other winner didn't want hocks I guess cause we got four and i never saw a Piggy with 6 or 8 legs. man they were good.

Now I never used the "Y" word even once! Hell, I call people form Dallas, Yankees! I know good food when I see it and really don't much care if it's cooked North or South, you know? Don't care what you call me as long as you call me to supper! I love the hamhocks cut up in a pot of Pinto Beans. I really don't know that there is a "bad" way to use a ham hock (in cooking that is).
Now I do get made fun of over here in Texas for my leanings toward Rice. There are some things that I just can't eat without rice (not really). Pintos aren't usually eaten with rice but I do!
Good eats is good eats (period).

Good eats are good eats- no matter what their origin BUT as for Texans laughing about Rice(Ras to Texas ras farmers) I'm surprised as lots of it is grown and eaten there--we had a couple of old boys in AK visiting that were ras famrers- man they spent $$ and had fun--

There's lots of rice grown on the Gulf coast between Pt. Arther and about Edna but not much anywhere else. There's sure not any down here in Goliad. Rice paddys afforded some good shooting (pigs) back in the day. There were even some guys that used to set up lights and shoot them at night with AKs and AR15s. A bunch of hogs can make a mess of a rice field. Up between Houston and Beaumont they raise crawfish in the rice fields as well. Them crawfish that wind up in etouffee are in rice from the cradle to the grave (in a manner of speaking!)

There ain't nothing quiet like pinto beans with a generous portion of left over ham and/or sausage over rice. That with a batch of skillet cornbread plus ice tea and supper is on the table!
I often freeze meal sized leftovers for dinner on my solo kayak camping trips.

It's early this am(4am) but you got me going yesterday so i bkaed a ham(smoked) from above mentioned Piggy and am about to soak some black eyed peas and then cook same with the ham bone and onions,grated carrot and seasonings ala a New Years day feast. Later I'll make some cat'shead biscuits and maybe some greens from the garden. Nice Sunday evening fare.

the best damned hamhocks I ever got were procured (pun intended) at a gunshow in Poughkeepsie, NY- about a half mile from the Vassar campus.
