4# of ground deer
1 whole onion
10 cayenne peppers
2 celery cores with leaves (about 6 center stalks)
10-12 baby carrots
Essence
1 cup of Italian dressing
1/2 cup olive oil
1/4 cup Worstchestershire Sauce
tbs garlic powder
3/4 tube of Ritz crackers

Chop the works and mix well. Foil line large pan and make 3 loaves, top with some catsup and cook in preheated oven (350) for 45 min. Pour off excess liquid and cook for 15 min more. Let it stand at room temp for 10 min and it's ready.

I had about 1/4 of a loaf. There were my two youngest sons and a girlfriend . They polished the platter pretty good. The boys are both 6'3" and weigh in at about 190. They can eat. The girlfriend just ate a girl's size portion but the boys thought it was their last meal.

I had coarse ground the venison so it had a chewier texture than regular ground meat. I found it pleasing.

Sounds good- a bit different than my meat loaf but will give it a try- i use onions- garlic- tomates SC --br crumbs-sometimes a bit of L&P and what ever hits my trigger that day-makes nice leftovers for sand.

Sound good Alan. I am the only one if my family liking meat loaf. As you, I prefer to course grind my venison for meatload and chili also. Then I mix it 2 parts to 1 part ground pork.

Seldom do I use the same recipe twice with ingredients often depending on mood and whats in the larder. But I always enjoy it.

That's why I called it "Quick"! I would have put more stuff (like bell peppers, green onions, etc.) but I was using what my hands could find. I got some Pork on sale (turns out about $1/#) and will grind some frozen deer meat and mix 1:1 the pork. It should cook up just fine without having to add any oil. I have more orders for more meat loaf. The next ones will be cooked on the smoker. I'm not cooking anything today unless #1 wife want something. She is coming in from New Orleans today and she's had all the good food she can stand I'm sure.

If any of y'all have a food processor, try this.
The next time you make meatloaf, instead of dried breadcrumbs give "moist" breadcrumbs a shot.
To make them just toss a few slices of bread that is still fresh into the food processor.
